Bu çalışmada farklı oranlarda (peynir için % 3 - %5, yoğurt için % 3 - %5 - %8) malt ekstrakt katılarak elde edilen peynir ve yoğurtlar, fiziksel, kimyasal ve duyusal özellikleri yönünden analiz edilmiştir. Yapılan kimyasal analizlerin sonuçlarına göre, yoğurt numunelerinde ; kuru madde % 17.88-20.55, karbonhidrat % 9,07-11.29, yağ % 3,74-3.83, protein %4,48- 4.55, laktik asit 1.26-1,27 ve pH 4.28-4,30 değerleri arasında değişmektedir. Malt ekstraktı eklenmesiyle kuru madde ve karbonhidrat içeriğinde istatistiksel olarak anlamlı bir artış saptanmıştır (p<0.05). Duyusal muayene sonucunda, malt ekstraktı miktarı arttıkça yoğurtların yapı ve susalma açısından daha kabuledilebilir, renk, koku ve tat açısından daha az kabuledilebilir olduğu gözlemlenmiştir. Peynir numunelerinde ise; kuru madde % 48,00-48.26, karbonhidrat % 6,29- 7.54, yağ % 17,48-16.86, protein % 15,90-15.73, laktik asit 1,11-1.16 ve pH 4.89- 4,90 değerleri arasındadır. Duyusal muayene sonucunda, malt ekstraktı miktarı arttıkça peynirin tekstür, lezzet, görünüş ve renk açısından daha az kabuledilebilir olduğu gözlemlenmiştir. Yoğurt ve peynir numuneleri arasında, panelistlerce yapılan değerlendirme sonucunda %5 katkılı yoğurt ile %3 katkılı peynirler, diğer yoğurt ve peynirlerden daha yüksek puan almışlardır.
In this study, the physical, chemical and sensorial characteristics of yoghurt and cheese added with malt extract at different levels i.e % 3, % 5 and % 8 for yoğurt; % 3, % 5 for cheese, were analysed. According tho the results of the chemical anaysis, in yogurth samples; total solid material varies between % 17.88-20.55, carbohydrate %9.07-11.29, fat % 3.74-3.83, protein %4.48-4.55, acidity (l.a.) 1.26-1.27 and pH 4.28-4.30. By adding malt extract, solid material and carbonhydrat content showed statistically significant increment ( p<0.05). As per sensorial inspection, it is observed that as malt extract is increasing,yoghurts are more acceptable for structure and syneresis caharacters and less acceptable for color, flavour and aroma characters. For cheese samples; total solid between % 48.00-48.26, carbohydrate %6.29-7.54, fat % 17.48-16.86, protein % 15.90-15.73, acidity (l.a.) 1.11-1.16 and pH 4.89-4.90 were found. It is observed that as per sensorial inspection, as the amount of malt extract is increasing, the texture, flavour, appereance and color characters are less acceptable for the cheese. As per expert panel evaluation for the samples of yoghurt and cheese, %5 added yoghurt and % 3 added cheese received higher rating than other yoghurt and cheese samples.
