Araştırmada, mekanik olarak kemiklerinden ayrılmış piliç boyun (MAPEB) ve gövde (MAPEG) etlerinin vakum ve açık ambalajlı olarak (-18°C)-(-20°C'lerde) dondurulup 24 haftalık muhafaza süresince, depolama stabilitelerinde meydana gelen değişim incelenmiştir. MAPEB ve MAPEG etlerinden alman ilk örneklerde (1. hafta) ve dondurularak depolanmış örneklerde ise 1., 4., 8., 12., 16., 20. ve 24. haftalarda; % su, protein, yağ ve kül miktarları, pH, thiobarbütirik asit (TBA), peroksit ve serbest yağ asitliği değerleri, kolesterol ve mineral madde içerikleri, pişirme kaybı ve su tutma kapasitelerine ait bazı kimyasal ve teknolojik analizler gerçekleştirilmiştir. MAPEB ve MAPEG etlerinin su, yağ, Ca, Fe, Zn içerikleri, pH, TBA değerleri ve pişirme kayıpları arasındaki fark; vakum ve açık ambalaj şeklinin TBA değerleri arasındaki fark; muhafaza süresinin (hafta) pH, TBA, peroksit, serbest yağ asitliği değerleri ve kolesterol miktarları arasındaki fark istatistik! olarak önemli (p<0,01) bulunmuştur. TBA değerlerindeki değişim üzerine; et çeşidi x ambalaj şekli, et çeşidi x muhafaza süresi (hafta) ve ambalaj şekli x muhafaza süresi (hafta) interaksiyonlarında istatistiki olarak önemli (p<0,01) etkiye sahip olduğu belirlenmiştir. Her iki et çeşidinin vakum ve açık ambalajlarda dondurularak depolanması süresince stabil bir yapı göstermediği; MAPEB etlerinin, MAPEG etlerine göre pişirme kayıplarının daha yüksek bir değişim gösterdiği, depolama süresi uzadıkça kolesterol içeriğinde artış meydana geldiği ve özellikle TBA, serbest yağ asitliği ve kolesterol içerikleri dikkate alındığında, vakum ambalajlanmış her iki et çeşidinin donmuş olarak ortalama 8 hafta, açık ambalajlanmış örneklerin ise ortalama 4 hafta süreyle donmuş olarak muhafaza edilebileceği sonucuna varılmıştır.
In the present research, the alterations in storage stabilities of mechanically deboned chicken neck (MDCNM) and carcass meats (MDCBM) frozen at (-18 °C)-(- 20°C) were investigated. The samples were either vacuum or nonvacum packaged and storaged for 24 weeks. pH value, % mouistre, protein, fat, mineral and total ash contents of MDCNM and MDCBM meats were determined in first week. The cholesterol, thiobarbutiric acid (TBA), free fatty acid, peroxide, cooking loss and water hold capacity values of frozen MDCNM and MDCBM meats were also determined in at the 1., 4., 8., 12., 16., 20. and 24. weeks. Statistically significant (p<0,01) differences were observed in MDCNM and MDCBM meats with respect to their % moisture, fat, Ca, Fe, Zn contents, pH, TBA and cholesterol values. The vacuum packaging affected (p<0,01) the TBA value, and the storage period had also significant (p<0,01) effect on pH, TBA, peroxide, free fatty acid values and cholesterol content. The interactions of meat type X packaging, meat type X storage period, packaging X storage were significant (p<0,0 1 ). The frozen storage of vacuum or nonvacuum meats did not give a stable TBA, peroxide and free fatty acid values. The cooking loss of MDCNM was higher than that of MDCBM. The prolonged storage time gave increased cholesterol content. Eight weeks period of froozen vacuum packaging storage and 4 weeks frozen nonvacuum storage of both meat types were suitable in respect of TBA, free fatty acid values and cholesterol contents of the samples.
