Bu araştırmada; farklı miktarlarda tuz (% 0, 0.5, 1.0, 1.5 ve 2.0), askorbik asit (0, 150, 300, 450 ve 600 ppm) ve kabuk yağı (% 10, 15, 20, 25 ve 30) ilavesi ile hazırlanan sığır eti köftelerine farklı sıcaklıklarda (150, 170, 190, 210 ve 230 °C) ve sürelerde (5, 7.5, 10, 12.5 ve 15 dak.) pişirme işlemi uygulanarak; bu beş farklı parametrenin, köfte örneklerinde heterosiklik aromatik aminlerin (HAA) oluşumu üzerindeki etkileri araştırılmıştır. Aynı zamanda araştırmaya konu köfte örneklerinde ham yağ, ham protein, pH ve renk yoğunluğu ölçümleri de yapılmıştır. Yanıt Yüzey Yöntemine göre Central-Composite Dizaynı (CCD) - Orthogonal modeli esas alınarak deneme gerçekleştirilmiştir. Merkezi bir dizayn şekli olan bu yönteme göre; merkezle birlikte 36 deneme noktası dikkate alınmıştır. Model; merkezde 10 nokta olacak şekilde düzenlenmiş ve deneme 10 tekerrürlü olarak planlanıp yürütülmüştür. Köfte örneklerinin renk ölçümleri üzerinde, öncelikle pişirme sıcaklığı ve süresinin etkili olduğu; köfte örneklerine ilave edilen kabuk yağı ve askorbik asidin ise belli bir seviyeden sonra etki gösterdiği tespit edilmiştir. Köfte örneklerinin ham protein değerleri üzerinde, araştırmaya konu parametrelerin etkileri istatistikî açıdan önemli bulunmamıştır. Köfte örneklerine uygulanan ısıl işlem süresi haricindeki diğer dört parametrenin köfte örneklerinin pH değerleri üzerindeki etkilerinin önemli (P<0.05) olduğu ortaya çıkmıştır. Köfte örneklerinin ham yağ değerleri üzerinde ise; doğal olarak köfte örneklerine ilave edilen yağ miktarı ile pişirme sıcaklığı ve süresi etkileşiminin önemli etkiye sahip olduğu belirlenmiştir. Köfte örneklerinde HAA'lerin oluşumu açısından en önemli parametrelerin pişirme sıcaklığı ve süresi olduğu belirlenmiştir. Pişirme sıcaklığı ve süresinin artışıyla, köfte örneklerinde daha fazla miktarda heterosiklik aromatik amin oluştuğu tespit edilmiştir. Köfte örneklerine ilave edilen askorbik asidin; 4,8 DiMeIQx haricinde diğer HAA'lerin oluşumunu azaltıcı yönde önemli (P<0.05) etkiye sahip olduğu belirlenmiştir.
In this research; the effects of five different parameters on the formation of heterocyclic aromatic amines (HAA) in patties which were prepared with addition of different amounts of salt (0, 0.5, 1.0, 1.5 and 2.0 %), ascorbic acid (0, 150, 300, 450 and 500 ppm) and back fat (10, 15, 20, 25 and 30 %) by applying different cooking temperatures (150, 170, 190, 210 and 230oC) and at different times (5, 7.5, 10, 12.5 and 15 minutes) were investigated. At the same time, crude oil, crude protein, pH and color parameters in patties in the experiment in question were also measured. The experiment was realized according to the Response Surface Methodology on the basis of Central-Composite Design (CCD) - Orthogonal model. According to this method which is a central design model, 36 experiment points including central were taken into consideration. Model was designed so as to having 10 points pattern in the center and the experiment was planned and conducted with 10 recurrences. Primarily the temperature and duration of cooking were important on the measurement of color of patties samples and it was determined that back fat and ascorbic acid which were added to the patties started to effecting after the particular level. It has been found any effects statistically that the all parameters were not effective on the amounts of crude protein of patties. It has been found that four parameters excluding cooking time were effective on pH of the sample of the patties. It has been naturally determined that; the back fat which was added into sample of patties and interaction of cooking temperature and time were found importantly on the results of the crude fat of the samples of patties. It has been found that cooking temperature and time were the most important parameters for the formation of the HAA?s in samples of the patties. It has been determined that while increasing the cooking temperature and cooking time; the greater amounts of heterocyclic aromatic amines in patties are occurred. Ascorbic acid which was added to the patties is having an important (P<0.05) reducing effect on the formation of the heterocyclic aromatic amines except 4,8 DiMeIQx.
