Viyol (yumurta kolisi) üretim tesislerinde en fazla enerji tüketimi kurutma ünitesinde olur. Bu nedenle, viyol imalatının en önemli süreçlerinden birisi kurutma işlemidir. Bu çalışmada, yaş halde yaklaşık % 68'i su olan viyoller, konveksiyon tipi bir kurutucuda kurutuldu. Viyolün kuruma karakteristiklerini belirlemek için kurutma havasının 0.5, 1.0, 1.5, 2.0, 2.5 ve 3.0 m/s hız, 50, 60, 70 ve 80°C sıcaklık ve % 9, % 18 ve % 27 bağıl nem değerlerinde deneyler yapılmış ve bu özelliklerin kurumaya etkileri incelenmiştir. Kurutma havasının % 9 bağıl nem, 1.5 m/s hız, 50, 60, 70 ve 80°C sıcaklıklarındaki deneylerden elde edilen nem oranı (MR) değerleri, literatürden 12 farklı kuruma modeli seçilerek EXCEL eğri uydurma programında kullanılmıştır. Modeller arasında Parabolik ile Wing ve Singh modelleri için en yüksek korelasyon katsayısı (R2) ile en düşük hataların karelerinin toplamı (SSE) ve en düşük hataların karelerinin karekök ortalaması (RMSE) elde edilmiştir. Viyolün etkin difüzyon katsayıları (Deff) belirlenmiş, aktivasyon enerjileri Arrhenius eşitliği ile hesaplanmıştır.
The highest energy consumption in viol (egg tray) production facilities is in the drying unit. Therefore, the drying process is one of the most important processes of viol production. Viols with approximately 68% water in wet basis were dried under controlled conditions in a convective dryer. Experiments were conducted with drying air at 0.5, 1.0, 1.5, 2.0, 2.5 and 3.0 m/s velocities, 50, 60, 70 and 80°C temperatures and 9%, 18% and 27% relative humidities, and the effects of these properties on viol drying characteristics are investigated. Moisture ratio (MR) values, obtained from the experiments with drying air at 9 % relative humidity, 1.5 m/s velocity and 50, 60, 70 and 80°C temperatures are used in the EXCEL curve fitting program by selecting 12 different drying models from the literature. Among the models, the highest correlation coefficient (R2) and the lowest sum of squared errors (SSE) and the root mean square error (RMSE) are obtained for the Parabolic and the Wing and Singh Models. The effective diffusion coefficients (Deff) of the violes are determined and the activation energies are calculated by the Arrhenius equation.
